Then, the vacuum pump system of the freeze dryer creates a vacuum environment in the drying chamber, and a high vacuum drying process is carried out to directly sublime the solid ice into gas, removing 90% of the flowing water. After that, the remaining 10% of the bound water needs to be removed in the analytical drying process. Because the molecular strength of bound water is relatively strong, vegetable freeze dryers provide more heat to sublime and remove bound water, resulting in vegetable freeze dried foods with a water content of 2-5%. The working principle of a vegetable freeze dryer is to use the principle of sublimation to remove moisture through three working stages, resulting in freeze-dried vegetables with very little water content.
