Simulate enzyme digestion of food during a series of incubation processes, mimicking food digestion in the oral, gastric, and pancreatic stages at biological pH and temperature. Use a combination of hydrolytic enzymes found in the oral cavity, stomach, and small intestine to hydrolyze proteins, fats, and starch in one go.
Intermediate or terminal products of digestion can be obtained, and blood glucose index prediction and resistant starch experiments can be conducted through selected modules.
The instrument can be equipped with GI and RS modules for full automation, enabling 24-hour autonomous operation without human monitoring.
